My mom always poured used oil into empty cans (such as from canned beans or whatever). I never figured out what she did with them after.
You can also throw them out in the landfill.

Some people actually put it into the fridge and use it to cook later, depending on the source like bacon fat or something.
I freeze them, bacon grease for example is great with brussels sprouts. Just cook with it in a skillet or similar like it’s butter. They absorb some of the oil and become extra tasty
