Doesn’t that just result in you doing more work in a day than everyone else? If my boss realizes I’ve done everything they just assign me more work. Sod that.

Not at all. My day is just paced differently. I can take it easier in the afternoons when my energy is low. I also love that my teammates have the latitude to chill at the beginning of their day, because they are definitely not morning people.
